Firstly. I'm sorry, there are millions of threads regarding this topic.

I live in the UK in a relatively small town and I want a 5s.

Do you recommend I order one online ASAP but still queue and if I happen to buy one from my local Apple Store cancel the online order?

From past experience apple only take the money once the phone is dispatched, im planning to see how long the estimates are tonight and then if they are long head down to queue..

Might order one online still as a backup incase i dont get one from store and cancel it if i do.
 
What happens if you get the phone from the brick and mortar establishment, come home and find the online order is at a disposition that you're unable to cancel the order? You'll have to pay 2x and return one of them.

I recommend patience and either order online, or choose to wait hours in a line for the chance of getting one before the stock runs out.

it is highly unlikely that the stock on the store will be anything better than "ships in 5-7 days" given supply constraints.
