I believe he's referring only to the notification center view... We've seen in other Apple.com demo videos that if you go into the actual Apple Mail app on the "home screen/universe of apps," then you can see full messages and even photo attachments.

You can force touch the email notifications and it opens the full email. Just doesn't show attachments obviously.

I love the Mail app, the notification you showed in the video is not a Mail notification, it’s a Google notification. Yes, you can see the full email in the watch!
