Madonna's cover of American Pie was also of high-quality.
 
Check out Matt Weddle (of Obadiah Parker)'s acoustic cover of Hey Ya by Outkast. It is a must see! He actually makes the song sound emotional... definitely makes it his own.

Apart from that, Iron and Wine's cover of the Postal Service's Such Great Heights is amazing as well.

It changes all the time, but my current favourite is Jeff Buckley's cover of 'Hallelujah' originally by Leonard Cohen.

kalisphoenix Alas I haven't been able to get into Simon and Garfunkle. I feel like I'd like em, but I just haven't given them enough time. That having been said, my opinion still stands.

Lets see, there are a ton of covers in the OC (a show I don't watch) so I'm sure some people could think up a few from that.

I know that's a lot by one band but I totally dig all of those covers.

The Indigo Girls have a version of Elton John's "Mona Lisas and Mad Hatters" on the Rarities CD. It's a really good cover.
