Your suggestions about 16 and 32 Gb ram

16 is overkill for you. 32 would be a waste of money. There is nothing coming in the next 8 years that will require 32GB of RAM. Heck, the MacBook Pro is overkill for you. You might want it, but you definitely don't need it.

Nobody even needs the internet. We lived and survived for centuries before the Internet. You might want it, but you certainly do not need it.

All we truly need is food, water, shelter.

More is better ... easy. There is no advantage to get less except few saved $$. Considering the Macbook price (while the price difference between 16 and 32 is not so big) and the fact you can't increase the RAM later, getting only 16 GB RAM may not be very reasonable and wise step.
