I don't know if this has been mentioned on the forms before, but if you enable the youtube html5 beta on your iPad you can get the full youtube experience. Now on the iPhone you should still use the mobile version, but on the iPad you can use a special touch version or the standard desktop version.

What you are seeing is the recent youtube modification that google made for all mobile devices. You don't actually have to change to html 5. It knows you are on an ipad and sends you to the appropriate site.

But yes, it is very good. I woold say better than the youtube app.
