Do you get lower resolution on youtube on MM1 Macbook Air compared to Maccbook Pro?
 
I don't know about the comparison but I'm on M1 MBA and YT vids through Safari tend to start off at a low resolution but if I click on settings and bump it up to the highest resolution available it then behaves itself.
