Owning both newer IPP models, if you keep both iPads in their standard ’default’ display as opposed to the ‘more space’ setting they act very different even if you have Safari desktop mode enabled for all websites. For example, YouTube on the 13” will display the entire side column but on the 11” you need to have the more space setting in enabled to get this. Additionally, on the 11” in default mode some websites will still suggest you download the app presumably because it doesn’t know how to translate your display resolution as mobile or desktop.

Sadly some folks may find the more space option on the 11” too small so if you want true desktop web browsing then you’ll need the 13” or use the more space feature on the 11”. Hope this helps.

Hmm, I’m not seeing this (unless I’ve misunderstood you). Here is YouTube in Safari on my 11” on the default display zoom settings:
