It's been exactly 3 months, 1 day since I picked up my 12 ProMax. For the heck of it I checked my Battery Health and it's finally dropped to 99%. Ok, so I know that's not a big deal what so ever. (Still hate seeing it..LOL). I do know so far I have used this phone far more - especially photos/video - in 3 months compared to my old XS Max.

I did get a very odd reading I got when I connected this to my Mac, used this old Coconut Battery app. "2010 Manufacture date??" Looking up my SN online also shows a 2010 year also.

The manufacture build date for your phone is a typo/error that put a "1" in the 3rd digit spot of the year instead of a "2", resulting in the right build day but of 2010 instead of 2020. Another thing I wouldn't worry about...but that's just me.
 
Launch day standard 12, still at 100% and don’t care about charging.
I often charge over night, sometimes letting my battery drop as low as 1 or 2%, I charge wirelessly and on 30W fastcharger. Just. Don’t. Care.

I guess the whole „don’t charge overnight“ or „don’t charge more that 80%“ is more like voodoo.
Might bring a benefit in battery health for long term (more than 5 years or so) but there are other factors like heat or cold that are doing much more harm to battery health than charging.
Just my 2 Cent.
 
My launch day 12 Pro Max is still currently at 100% battery health. I charge it once a day (usually at night before I go to bed), never charge it overnight either. Also, before I sleep, I always unplug it, no matter if it reached 100% charged or not and with my usage, my battery lasts me the whole day. Good enough for me! The only thing I always do is make sure it’s unplugged before I go to sleep. I don’t like leaving anything charging overnight.
 
I received the Pro Max on launch day. I don't charge much overnight because I plug it in every time I'm in my car, which is a lot on weekdays, so I only need to plug it in overnight sometimes on weekends. It's almost always around 85-90% or so, give or take. I also always have it on 5G versus WiFi (even at home) because I get a really good, strong 5G signal almost everywhere, and it's a faster, much better signal than my at-home WiFi (and I have unlimited data, no throttling ever so I don't worry about data limits). In addition, I use the personal hotspot to tether my iPad and my kids' various devices while we're in the car on the weekdays. The battery is still at 100% capacity. I don't really actively think about babying the battery to prolong battery health/capacity, never have on any of my iPhones. I will say that I wouldn't use them 'til the battery was drained to nothing, or leave them purposefully in extreme hot or cold environments. My last iPhone, the iPhone X, which I got about a month after launch and had about 3 years, had about 90% battery capacity when I traded it in, and I used it the same way I'm using my iPhone 12 Pro Max now.

Tend to agree with you about voodoo. I’ve always done well with device battery life so far, but it was pot luck not method. Just use the thing seems the best policy to me.

Launch day Pro Max. Plug it in at night and unplug in the morning as I have done with every iPhone and Android phone I have ever used.

If I need a recharge during the day due to a boatload of virtual meetings, I use a Samsung wireless charger on my desk or plug in if I need a quick top off.
 
3+ months and still at 100

however, this is the first iPhone I am purposely not charging every night... only topping up from 40 to 80% when needed.
