I use recording software to record music on youtube....its done and on the desktop...itunes refuses to import this music by drag and drop or by import....I guess Apple insists that all the music be bought from Apple now..."you paid for it....but we control it" Is there a work around? What about deleting the plist of itunes?

Just imported an AIFF file with no issues. Make sure the format is correct, or convert to mp3 or aac first. Has nothing to do with buying it or not.

Just tested this out after reading this post, I was able to import an album that I ripped in AIFF format. No issues. I also tried an aac and mp3 file. No issues with those either.

AIFF files also do not come with DRM, thus iTunes does support your home made AIFF files. iTunes even supports exporting an MP3 to AIFF.
