I, in fact, didn’t untick the Tahoe option. I simply clicked the ‘download now’ button in the Sequoia section. Once that was complete, I updated Safari the same way.
It took me a while to get round to this, as I was concerned for a while - having clicked the ‘i’ button and been confused by the ticked selections shown. I put it off until yesterday.
Yes, if you click the ‘i’ button in the Sequoia section, it will take you to a dialogue box where Tahoe is ticked and Sequoia not. If you untick Tahoe and return to the updates page, all might seem well.
But then the Sequoia update begins, and is almost 3 times the stated size, and alarm bells go off in your head.
Fact is, every time you click the ‘i’ button in both sections, the Tahoe option is ticked. Untick then return, and click ‘i’, and it will appear ticked again.
BUT, until you actually click in the Tahoe dialogue section of the main update page - you will not get the Tahoe update.
I hope this clears up any confusion. There is no skullduggery. If wary, then don’t have auto-update selected.
My issue is just that the Sequoia update was much bigger than stated, and the upload size was so staggeringly suspect.
No-one here will know. Only guesses. I wonder how big the Tahoe upgrade really is, once it gets going?I too noticed the sudden increase in the download size of Sequoia 15.7.3, from 1.2 to 4.8 GB. Did not monitor the upload activity, but wish I had.
If you or anyone figures out why this occurred, I'd really appreciate knowing.

It's the 2018 Air: the wedge-shaped, retina model, with the butterfly keyboard, which I love, the terrible 480 camera, and the insanely stupid two USB-C ports and no other connectivity – Ive deserved his ejection. I didn't do the "defer" profile mentioned by OP when they reference a previous thread they also started, why would I use that method instead of using the tools that Apple already provides? I already have the option to not automatically download/install software. It's under my control as a user. So perhaps this is all relevant only to those who turn over their system software updates to Apple (I'm sure there are many of them, possibly a majority of users), but, as @macaddiict mentions, the sky is not falling.
When I go to System Settings and check my "Software Update" options (I'm running 15.7.1) I can go to 15.7.3 OR Tahoe (26.2), those are my options and it's up to me. It's really clear what I'm getting if I want to upgrade my OS version. I use my eyes and I pay attention to what I'm asking the settings menu to do.
If people aren't paying attention to what they're asking their upgrade settings to do, this isn't Apple being evil, it's because people are clicking pretty important buttons without giving enough thought to the results.
I have all kinds of sympathy for those people, though. I have a friend who is still angry that he had automatic updates turned on, and now he's stuck with a Music app he dislikes. But anyone who just upgrades system software without paying attention, I'm sorry for you but that's on you.
And no, I don't think Apple is uploading gigs and gigs of my personal data for their unspecified but clearly very nefarious reasons* when I update software. When I read that sort of post my first thought is always "why would they?" So I see those posts and take it with a laugh and a grain of salt, then go back to reading what's here that may be rooted in reality. There is good advice as well as bad advice in these forums, it really pays to not freak out about everything you read, especially when it seems like someone is trying to get you to freak out over a thing that doesn't even apply to you.
