Is it possible to upgrade a 2010 mini to USB 3.0 or thunderbolt?

No, as USB 3.0 is not yet implemented in Intel's chipsets and TB needs an extra chip.

Is Firewire 800 and Gigabit Ethernet too slow for your needs?

Some one gave you a minus and I evened it out by giving you a plus.

the 2010 has 2 strong points

1 it runs snow leopard

2 it has a dvd player.

It has many weak points so ask your self two questions do I want snow leopard? and do I want a built-in dvd player?

If both questions are yes keep the 2010 mac mini or buy a used 2011 macbook pro from February look for one on ebay. If you don't want snow leopard or a dvd player get rid of the 2010 and get a new one.
