No one's complaining, but there have been a ton of these threads, maybe it should become a sticky.
I think that would be a great idea.
Especially as quite a few apps/threads keep on reappearing.
Mods?

Not once did I see Onyx, so here's my list:
Onyx
Firefox - Bon Echo
iTunes
Adium
VLC
iCal - I don't use it very much :(, I need to, so I will :)
XCode
Google Sketchup
OSXVNC - good for when I'm on a PC and need to do stuff on my Mac
NeoOffice - OpenOffice built with Cocoa and Java

Yes! Mods, please do create a sticky!

I did look at the older posts covering this same topic but, as was mentioned above, the subject matter of this(/these) thread(s) is such that, while interest may cycle, the content of particular threads becomes less and less relevant (e.g., a post on this subject begun in 2004 isn't so helpful anymore, particularly for one using an intel machine, such as myself (macbook)) -- hence, the near-cyclical reappearance of threads on this subject.

So thanks to everyone who replied with helpful and up-to-date info. (Clockish is great, by the way -- thanks for that! :p )

Here's one I forgot to mention: SMS, a widget for sending text messages from your computer!

My Top 10:

Sidenote
Pastor
Seashore
PixelNHance
NetNewsWire Lite
Cyberduck
Silverkeeper
MacJanitor
wClock
Camino
