i just want to make sure, for the pre orders it is still 12 AM PST, 3 AM EST?

Need to set my alarm correctly.
 
What's the purpose of ordering early? Does it get shipped out earlier?

I'll tell you from personal experience, if you don't get it ordered within the first twenty minutes or so, you could be waiting a month or more for your iPhone. If you look back at the threads from the iPhone 6 and 6 Plus release you will see many people got dates a month or more away within minutes of the ordering window opening.

Unless you want the iPhone 7 Plus with 256 in Black. In that case just wait until morning that way I can get my order placed at 3:00 AM

I wouldn't worry. Since 128GB is now available, I think a lot of people will go for that. The more expensive 256GB is something only hard core movie watching people will go towards. Me personally, the only reason I'm upgrading is because of the 256GB, but there aren't too many freaks like us :)

Why don't people just preorder and pickup in store on the opening day so they don't have to wait for months on end? Or is that a thing?

It's to make sure you get one release date, otherwise the wait could be weeks.

Possibly, depending on the model/color. From personal experience, I remember when the iPhone 6 came out and they had that glitch where Apple site was down for almost an hour before people could order. I gave up and conceded to the fact I'd probably get it 2-4 weeks later. Woke up around 6am EST, placed my order through Apple Store app, and I still got it on release date.

yes it goes live tonight at 3am but at times apple sucks in a way that their servers don't go live at 3am our time then we are there refreshing the apple store site and using the apple store app seeing which one goes live first then rushing for the kill.

it says 3am will go live. but sometimes it will be 305 310 320 etc... make sure you have your iPhone, iPad, macbook all handy so you an order it. lol, one be on the app and one on the site

I want to shoot photos in the RAW format. Not to mention videos which may be in 4k. That will eat through storage space.

If you choose shipping, it will arrive on the launch date. This is the best option as you'll still have to wait in line even if you order to pick it up in store. The main reason is if you don't pre order within the first 10 or 15 mins, they will run out of stock quick. Of course it depends on which models but based on my experience, the Plus with the new color always go out of stock first.
