I have a 2012 5,1 running 10.12 with 3x 1080Ti in it. I'd like to upgrade the monitor to a 38" one.

Do these size monitors work with this computer? I have a vague recollection of reading something indicating I'd be out of luck.

Should they not work, what are the largest display I can run?

I'm not sure if this helps, but I have a 5,1, which I upgraded to a Mohave capable video card, can't remember which right not, but it has two hdmi ports. I connect my computer to a Vizio 32" monitor/tv, and a 65" LG OLED monitor/tv. So, the question in my mind is what is the purpose of the connection? I've never had a problem connecting a Mac computer to a variety of viewing devices, but I do understand that other people have more specialized uses and there are issues with connecting to 4K, but you're better off looking through the topics in forums, because I'm sure that the issue with which you're concerned is addressed elsewhere.
 
Monitor size is completely independent to computer's compatibility.

Only resolutions, connections types, or even functions (e.g. HDR) matters, but not the size.

Actually, simpler put: What is the maximum resolution/hz that a 2012 5,1 on 10.12 work with?

4K works on cMP for few years
 
I’m running a 5k LG-34WK95U-W 34 inch IPS monitor from a Sapphire Pulse Radeon RX580 on my 2012 Mac Pro 5,1 in 5120 x 2160 with no issues. Have done nothing to the card. I don’t think you will have any problem.

One last question: do I need a particular cable type/conversion to output maximum hz and if so, what type?
 
The DP or mDP is the way to go, otherwise you won’t get 4K. I’m running a 38” Samsung 4K monitor on a GTX680 under Sierra. I get full 4K on the DP, but maxed out at 2k on HDMI.
