I agree that it's likely that much more orders per minute came in between say xx:05 - xx:15 than between xx:00 - xx:05. I saw many reports of people not being able to get the store website to come up until 5 minutes in.
So don't expect Apple to catch up on the basis that the rate of ordering quickly dropped off. I'm pretty sure it didn't until maybe 20 minutes in.
That said, we could still see an increase in fulfillment rate based on Apple solving initial production issues and bringing more production lines online. There are scattered reports and rumors that this is the case. Though it's a big mountain to climb because they also have to build stock for store launches and new countries.
