I have a 6s Plus - would I see a massive improvement if I purchased an Xs regarding the camera?

I know phone spec not announced yet for Xs but perhaps going off what an X is like?
 
Not really. The biggest incremental improvement over time is low light performance. If all you do is upload them to social media then it doesn't matter what you use as long as it's newer than an iPhone 5s.

The biggest feature on the latest phones is the optical zoom, which works very well. I'd like to see more than 2x with the Xs, but that might have to wait until the XI.

When it comes to video, then yes. There was a step up with the iPhone 7/7+ from older phones & the 4K quality on the iPhone X puts most if not all consumer DSLR's to shame.

I haven’t got an X at the moment but I’ve read many people have had problems with red eye. Hoping the new phones will have resolved this, but I haven’t seen it mentioned anywhere yet

The dual camera of the X might create some nice portrait photos for you. Also, imo the smaller size of the X compared to the Plus phone makes it easier to handle in spontaneous moments.
Having said that, for pictures of children, the more important part imo is just being there in the first place. :)
 
It completely depends on how you use your phone and how skilful you are in phone photography/ photography in general. If it’s just casual shooting then you won’t see much difference but if you’re into photography and like to achieve something awesome with your phone then the 8 plus / x is a better choice.

Ps. 8 plus doesn’t have the red eyes issue as mentioned in the thread quoted above.

Portrait mode in really low light... at least I think it took it as portrait mode.

Actually it was mentioned in the keynote about better red eye correction.

You’re right it was. However my post was a while before the keynote so I was referring to the rumour mill. Fingers crossed their improvements have the desired effect.

Sometimes in low light conditions the phone flash might be the only option.
