Well I did it on one of my iPhones this morning and it all went like a charm, but tonight when I was going to do my other iPhone, it wouldn't because it said I could do 8.0.2. Now I have one iPhone on 7.0.4 and the other on 7.1.2. That was a bummer! Why do they have to close the window so fast?

Fast???

It is real slow with 9 days, usually it is hours.....
 
It actually was unsigned after a day but I am "guessing" due to iOS 8.1 they resigned it. Now, it's closed completely as iOS 8.2 is "stable".

Nope, it was open from 8.0 release until early this afternoon.
Both 8.0 and 7.1.2 were open.

Has nothing to do with 8.0.1 or 8.0.2 which is i guess you mean.

Hmm. ok.Except when i went to do a dfu restore a few days after 8.0 came out, it (itunes) wouldn't allow me to restore. It was going to update to the latest 8.0 version and I stopped the process. This time, I did the restore without a dfu update.

yeah, my bad. i left out the extra 0 when quoting the numbers.

Ofcourse, it automatically goes for the highest (8.0) iOS if you hit restore, DFU does not effect that.

If you wanted to restore to 7.1.2 you had to download the IPSW manually and do a alt-restore or shift-restore in itunes.
 
Next time download the ipsw prior opening itunes, then place device into dfu mode, then press and hold Windows: Shift then Click on Restore
Mac: Alt/Option then Click on Restore
Direct the now open itunes dialog box to the ipsw you want to install, if it was the RIGHT software for your device and it was 7.1.2 IT WOULD have installed up until earlier today

Did that....right away earlier in the week. I couldn't circumvent the DFU iTunes firmware update to iOS 8 without backing out of DFU mode. I had already saved the backup .ipsw knowing that I would need it so I knew I had the correct version. I was so pissed, but fortunately I did the restore earlier today (not in DFU) mode and it worked. Hopefully there is no difference between the DFU install and the Restore (holding down SHIFT key while pressing RESTORE) because the Pangu jailbreak left my i5 unstable. However, come to think of it, I don't believe I was presented the option to install the .ipsw file while in DFU mode. Maybe I didn't hit SHIFT restore in DFU mode?

From your postings it appears you might not fully understand DFU and restore function/sequence

DFU-mode on your iphone is independent of itunes. It bypasses iBoot in other to let you downgrade to a lower still signed firmware.

If you hit restore in itunes, itunes will restore automatically to the highest available signed iOS version, in this case iOS 8.

The only way you could restore to iOS 7.1.2 at that point is to have downloaded the 7.1.2 IPSW and select shift-restore to select the downloaded IPSW.

Any otherway would lead to what you described, a automatic restore to 8.0.

Using the wrong iPSW would be impossible as I saved the .ipsw on my desktop from the iTunes directory after searching it. You see, about a month ago, I had my i5 replaced from Apple and I used my laptop to install iTunes. I also wiped my i5 and then reinstalled the firmware in DFU mode. I followed the steps here to get into DFU mode: https://discussions.apple.com/thread/5269891

DFU MODE STEPS

Hold the Power Button (3 secs)
Continue holding the power button and also hold the home button (15 secs)
Release the power button while continuing to hold the home button (10 secs)
Your device should prompt with the "Connect to iTunes Screen"

I think I didn't hit shift-restore, that's why I wasn't prompted to launch the .ipsw file.

it lasted longer than others. it was still signed for more than a week after ios8 was released
