But what happens if you already have an Apple TV subscription? I've probably already watched the first three episodes of series that pique my interest, so this is of no benefit to me.

Seems like french companies tend to like Apple TV somehow. Even here in Slovakia if you subscribe to a Canal+ addon on your cable network, you get Apple TV as a part of the offer.

What I would love is an option to temporarily pair my own AirPods with the seatback screen and use them for the in-flight entertainment. Right now it’s basically either the airline’s mediocre headphones or bringing your own wired set with a headphone jack which I don't really care to do.

If Apple worked with airlines on a simple, secure “one-flight pairing” feature (pair, watch, automatically disconnect at the end of the flight), it would make watching content so much more comfortable and convenient. It would also save airlines money long-term too, by reducing the need to supply headphones.
You can buy bluetooth transmitters that plug into 3.5mm jacks (and I have an adaptor for that weird double jack that airlines use). They're pretty cheap - just check eg Amazon

Personally, I have an over the ear set of NC headphones that has both wired and bluetooth connections. Really makes a difference and doesn't cut out announcements. I'd worry about losing AirPods if I dozed off for example.

If I recall there are some airlines that offer this?

I think Apple would prefer you watch content on your own device, such as a nice shiny 13" iPad Pro. 😉

I flew Air France long haul twice in the last month and they were already doing this.
Only a couple or episodes of each though so it's really an advertising exercise because you only get a taste of each

Someone was talking about pairing blue tooth devices and yes, they've also been doing that for a while now. It might take a couple of goes as you have a lot of other devices around, but it worked fine.

They also had free Wifi which worked well if you signed up for their 'Flying Blue Service'. You don't have to pay you just have to sign up and then it's good enough to watch what you like on your phone, ipad etc.
I think it depends on how recent the aircraft is though. They made a point of saying it was the latest Airbus both times and how it saved 25% fuel so maybe it's also a feature?

I have had good experiences with Air France over the years. The food is pretty terrible it is true- but the seats are fine with pretty good room, generous luggage allowances. It's rare to get good food on an airplane anyway and the service is pleasant.
I guess it depends on the route though. They are pretty good about letting you get up and walk around and they always have water, juice, sandwiches, biscuits etc available the whole time. They are OK. I have no complaints.

American Airlines? Worst two flights ever by a mile more than 20 years apart so no thanks.

Best ever overall: Malaysia airlines.
Most 'interesting' not really bad just bizarre. Aeroflot. Putting gaffer tape round the wing before take off was a highlight and the carpet which stuck to your feet
Best food: Hawaiian Airlines in first class

"The complimentary in-flight selection includes the first three episodes of Ted Lasso"

Of course it does
