I think if you’re using both an Apple Watch and AirPods, it should be possible to get a more accurate heart rate. With two sources of data, the device could provide a more precise reading, which would also improve the accuracy of calorie tracking. I don’t think the system would rely on just one or the other.
Would indeed be great if they did that, but unfortunately, that's not how Apple has set this up. If you are wearing an Apple Watch and the Airpods Pro, the system defaults to the watch and ignores the heart rate data from the airpods. This is how it works with the Powerbeats, which also have heart rate monitoring.

Sound quality is the single most important feature for me and I'm skeptical about how improved it is with the same chip. I understand that's highly subjective, but that's still why I'm waiting for reviews.

This article shows exactly what it is. These are just rebranded Airpods Pro 2. The ANC claim is achieved by using better foam tips similar to comply.

There are np actual differences its the same H2 chip.

Costco has the APP3 for $249 but includes AppleCare for free.
No need to upgrade from the APP2 if it works for you.
Better to wait until the holiday time, like Black Friday, to see if Costco, or even Bestbuy, will have a sale on the APP3 for less.

Will wait for reviews before upgrading but the ‘A’ in ANC stands for ‘active’. The tips are passive. If Apple are saying improved ANC then something else has likely changed beyond just the tips.

The x2. Better anc is just the new foam tips it still has the h2 chip
I assume that the better tip fit allows them to crank up the noice cancellation by permitting the injection of the anti-phase (the noise "cancelling") to be increased before getting feedback effects and potential oscillation.

That would explain with the ANC can be improved on this model despite being the same H2 chip - and why they couldn't apply this to the H2 equipped APP2 (even if they weren't scared of cannibalising upgrade sales)

Sometimes it’s more about the software than the hardware. If the chip is still performing well, there’s no real need to replace it. That said, I think the AirPods Pro 4 will probably be released sooner than we had to wait for the Pro 3 with temperature sensor for example.

I do not really understand the case for heart rate support: I wear Apple Watch 24/7 — does that mean the heart rate support in AirPods Pro 3 will never be active?

Apparently Apple upgraded the heart rate support: Now they support simulataneous recording from headphones and watch to added reliability.

Sound quality is more about passive ear canal isolation, driver(s), and acoustic design than the chip. This is how high (~ $1000) end ear monitors like Shure SE846 Pro get their sound quality.
