Because they need to work on the sound better. Earbuds from other manufacturers have had parameters and sound quality much better for several years now. and these ones waste effort and our money on sensors
This is why I am seriously looking at another brand for my next pair of earbuds. I keep reading amazing things about Sony and Technics (Panasonic) when it comes to music sound quality.
 
Samsung tried this a few years ago with their Gear Icon X buds. The idea was that you could record a run without a phone or watch. They had on board memory to store music, a heart rate monitor, GPS and a pedometer. The problem was that as well as they worked the watch was always at least a step or two ahead and just as comfortable to use so not many people cared about the solo use so eventually they cut the features. It will be interesting to see if Apple can make this a thing again.
 
So what I get from this thread is that many are dissatisfied with the sound quality of the AirPods Pro.

I buy AirPods for sound, not for health. Just keep improving audio please and no health sensors that make it even more expensive.
Well the AirPod Pro’s are getting health sensors no matter if you like it or not. Their getting tiny cameras as well in the future. Get the AirPods 4 non-pro if you don’t want those health sensors.

Why do we need health sensors in headphones? I’ll want better sound quality. That’s what headphones are made for.
It’s ridiculous. The feature is already included in the Apple Watch. So, if you’re like me and wear an Apple Watch 24/7, it’s pointless.

Give us longer battery life and improved NC, please.

What you say makes no sense. If you want premium music sound quality you are NOT even considering the AirPod 4 non pro. A better suggestion would have been "buy earbuds from another company".
 
Apple really needs to start pre-announcing delays. These last-second delay announcements are just killing my productivity.

By the way... this would never happen if Steve Jobs were still around, I'm switching to Windows, you're all just sheeple, and uh... oh yeah, fire Tim Cook.

Rtings has the APP in their best wireless earbuds list, so I’m not sure where you’re getting the idea that others have been beating Apple for years. At such a compact size, I don’t think many come close to what the APP offers. Having said that there’s always room for improvement.

If sound is the only thing that matters to you, then you’d be better served with options from Bose or Sony. Personally, I prefer the design of the AirPods Pro and the benefits of being in the Apple ecosystem.

These are powerful computers in your ears. Why limit them for just one thing when they can offer useful data or functionality in other ways? Out of purity or orthodoxy?

There's a near-endless variety of headphones on the market that do music playback and nothing but music playback. The AirPods are clearly not that.

These are rumors of internal delays and schedules, of which we have very little reliable information - hence, rumors.

In other words, they're not "officially" delayed

No. APP3 is a mandatory purchase. Nobody gets to choose which ones they want by comparing features and making an informed decision. Please don't suggest that someone choose an alternate product.

Who lied? Apple never announced a date for this. It’s only speculation from Mark Gurman and some lines of code in a beta.

For example, if an English speaker with AirPods is talking to someone who is speaking Spanish, the ‌iPhone‌ will detect the audio, translate the speech, and relay it back in English to the person wearing AirPods.

Now that is just downright wrong. What an inconsiderate thing to do, talk to a person wearing headphones. Oh boy, what has mankind come to?

Be courteous. Love thy neighbours. Better to sit next to each other, using one's phone to translate. (you're also closer to the girl)

The original poster was suggesting Apple 🍎 not putting Health sensors on the AirPods Pro’s when they already have them on the Beats Fit Pro’s. All I’m saying is that they’re coming to the AirPods Pro’s no matter what. It’s inevitable a certainty.
