Can someone explain this to me??? I’m confused.

I have a series 3 which the display is what? Glass??
What does the sapphire glass do for the others?? I’m not sure what I’m reading but really curious.

OK, so if you have the sport model Apple Watch, that has the ion –X glass, (which is almost identical to what the iPhone displays use.) If you have the stainless model and above, you would have the sapphire display, which is a protective coating against scratches and scuffs.

The Ion-X Glass is extremely inferior to the sapphire display. They both include a factory applied Oleophobic coating, which is a temporary protectant to the displays that wears off over time with touching.

Just in case: due to the unboxing now it‘s safe that the Stainless Steel- and Titanium-models have sapphire glass. 🥳

The more interesting question is if the aluminum got the sapphire glass as well?

It did not. There's screenshots of the back of those on Apples site showing ION-X Glass on the back.
