The 80% at 500 cycles for the iPhone 14 and under is not a limit. My 14 Pro Max I'm sure is well over 500 cycles at 77%. And still working great.

It’s not a “limit,” you’re correct. It’s what Apple claims you can expect when following the guidelines, including a limited guarantee (i.e., warranty).

You absolutely can use your iPhone (and other devices) with a battery capacity, relative to new/original, below 80%. In fact, people should be. Put bluntly (and simply), 99.999% of users whining when/about their devices’ battery capacity being above 80% — or especially 90% — it’s a them problem.
