Not texts though.

What is the quick and easy way to restore contacts, camera roll and calendar without restoring from backup?

Contacts you can copy to your computer sync back with address book using itunes.
Camera roll you just copy all the pics from the camera roll in a folder on your computer and then sync it back with itunes.
Not sure about calendar events.

Well, that puts the pics back on, but not in the camera roll, plus the videos wont sync...though they can be synced back to camera roll through an app

Yes, they're there on the phone either way right? Camera roll or another folder don't make a big difference.
And you can copy/sync videos to your phone also.

Oh I know, I just like them in the camera roll/one place...I'm most worried about calendar, and the app for contacts you suggested didn't get super reviews

Get a paid app from Cydia called PhotoAlbums +. I've used this (along with Drop Box) to put pix back to the Camera Roll of my 4S after a restore and clean install.

Adress book is not an app, its just something you copy your contacts to and from the iphone to the computer. Im on a windows machine and its labeled windows contacts, so on a Mac its probably called something different.
But when you plug your iphone to itunes click on the iphone on the left and then on the tabs in front of you go to "Info"
Sync contacts with:
And select whatever option you want.

I am not too worried about my contacts or photos. Just my texts and whatsapp messages. If there was a way to restore them, I'd set up my phone as a new phone.

Well there are texts, camera roll, and contacts i want to keep....as I imagine most people are...unless there is an easy way to save those and import them on a new phone

If syncing with a mac the camera roll is saved as well as the address book. Read the texts, who keeps those? That's like saving old mail isn't?
