NAND stands for NOT-AND. It is a logic gate. A logic gate takes a set of bit-wise inputs and generates an output.
First, we have an AND gate. It has two inputs, both inputs have to be "1" in order for the output to be "1". If either or both inputs are "0", the output is "0".
Then, that output feeds into a NOT gate. This inverts the input. 0 -> 1 or 1 -> 0.
So a NAND gate is simply a logic gate with this truth tables:
