I play it in periods. Starting out heavy during covid. I have only played single player. It is like Civ in space. There are loads of expansions, some may worth to get, especially during sales. There might be a somewhat high threshold to start, since there are so much things to you can interact with. There are however good guides online so you know what things you can let the AI manage and where you have to take control by yourself.

For me, an interesting element is that the different (major) opponents (e.g., "awakened" fallen empires, L-Gate builders, end-game crises entities) need to be managed quite differently, including fleet load outs and strategies (many small ships vs heavy hitters, hit & run, massive battles, turtle/chase etc) / locations / shortcuts/routes (black holes vs StarGateways vs "ancient L-gates" etc), but unless you read up on them in tutorials or the Stellaris websites, you will be unprepared for most challenges.

If you never got to battles, you haven't gotten very far in the different tech trees and cosmic exploration, which can take a long time depending on settings. You can speed up things by tweaking how fast the tech evolves and populations grow etc.

Your point about missing real time space battles - that is not a strong point, IMHO - while you can watch the battles in the star system view, I never do - it's a confusing hard to understand huge brawl of dots and lines, which can to enlarged to see ships and beams, but you completely loose any sense of what is happening. I just watch the real time reporting on damage & losses of the 2 sides in the galactic view, in case I need to intervene with withdraw/reinforce action.

That's not quite how I would put it. The End game crises events aren't evolutions of the AI's you are dealing with earlier - they are sudden invasions by previously hidden or extra-dimensional etc. (very powerful) foes that typically attack everyone they come into contact with, usually with the goal of exterminating everything, and the galaxy's AIs typically band together against them - you can join them or not.
