I originally had a 16gb black iphone 4, I lost it and bought a white 8gb iphone 4 to replace it (the 4s was too much on craigslist) anyway I hated not having the space and freedom i had on the 16gb I mean I didn't have my entire music library on it but I had a most artists but now with the iPhone 5 I knew I wanted the 32gb atleast and now that I have it I kinda wish I had spent the extra $100 and just bought the 64gb to ensure I never have any issues with space but 32gb now with everything from iPhoto, and iTunes, leaves me still with about 12gb free which is nice considering those librarys are almost 5 years old but I don't think I'll use all that space but I would like to know that I never will like I would with the 64gb

the 64gb gives you peace and mind.... thats the biggest thing it does
 
I think the moral of the story here is that if you can afford it and you have a lot of music, video, pics, whatever, it makes sense to spend the relatively little extra coin and get the largest iPhone offered... You can always use less...but having that extra space sometimes really pays off.
 
My two previous iPhones (3 Gs & 4) were both 32 GB. I didn't notice filling up the space so much on the 3 Gs because I only used it for a year and then passed it on to my son, replacing it with an iPhone 4. Earlier this year I really began to notice how little space remained of the 32 GB and knowing I was planning to upgrade to the iPhone 5, I decided to spend more $$$ and just double the storage to 64 GB.

It's comforting to see that even after restoring the new iPhone 5 from the iPhone 4 backup, I've currently used the same amount of space (remember, it's only been a week :D ) but the available storage remaining is more than the total amount of my last iPhone. :)
