I just don't get the point of this other than "because we can"?

Really? Someone told me that you can turn it off in the settings. If not, I’m keeping my parents and in-laws on IOS 18 for as long as I can.

You can not use it for the icons and use standard or dark mode but control center and notifications it’s there

I think that if they made the icons way simpler and maybe even round, then maybe the whole glass thing could work. Like using the blue navigator symbol on the Maps icon instead of the streets and stuff below. Make a simpler "Photos" icon etc... And fix all the areas (control center) where the background interferes with the content above, then maybe it could work out more elegant and timeless. All the glass effects and outlines complicate the visual appearance.

It is definitely a bold move introducing such a design language. I have a hard time seeing it last as long as the current design have existed and evolved since ios 7. But maybe I will be surprised when I try it. And there is still a few months to finish and make it better.
