I would absolutely not.

This is going to have a NFC component that will hand over to whatever merchant you use it your entire DL info. That's not just proof of age, that's your DL number, your SS number if it's on there, your home address, whether you need glasses or not, the kind of DL you have, and anything else on there.
It shows you exactly what information is being requested and doesn't transmit anything unless you confirm with a double click on the power button. See the video "how to present your ID" on the bottom of this page for an example:

Not how it works. You aren't supposed to unlock or hand your phone to anyone. Just hold it against the reader device.
And unless the body cam happened to be on, you consented when piggy yanked it out of your hand. The phone unlocks when you look at it, remember?

The liquor store clerk does a quick glance at my DL, if they ask at all. Unless they've got a photographic memory, they don't remember the rest.

And for those places that like to scan the barcode - that won't work, because my DL had a brief accident with a bench grinder, the barcode is unscannable.

My DL will NEVER go on my phone. Not happening. I'm sticking with the physical card for that.
Now you are just making stuff up. Which state has SS on their ID. Might as well put passwords, your pin and life history. Your fear mongering is next level.

I don’t know where you are. But here, they must scan that barcode and if they don’t, they don’t sell it to you. Also, from my limited understanding, the magnetic strip has the information you describe, the barcode on the back simply confirms the authenticity of the card and provides proof of age.

Every ride along I’ve ever been on has pulled up the drivers SSN when the license was swiped. Whether that’s pulled from a database, based on the DL number, or held on the card. I couldn’t tell you.

Eh, that's kind of the same as ApplePay. Some places take it, but not everywhere, so you still have to carry your credit card around.
Could not disagree more. I have my ID on my phone (obviously in one of the states). It is effectively useless. When I travel based on various other things like pre check, face scanning, etc I don’t need my regular license so I don’t need this. I have used it 0 times and I fly a lot (and appreciate convenience). What I HAVE had to do nonstop is advise relatives that this is NOT a replacement for your physical license. Especially in context with police.

Apple Pay is so ubiquitous today that it blows my mind. I only use physical credit card at…hmm. Haven’t used it in a while. I still carry one, but that doesn’t bother me because I still have to carry my ID so I might as well have both.
 
Ok, stupid question. What about police and traffic stops? You have your license on your iPhone and hand it over to the cops. Wouldn’t they have full access to your phone, pictures, etc?

I ask because I just tested with my iPhone. I double pressed the power button to bring up my wallet. It immediately performed a Face ID scan. I would then presumably scroll to my drivers license (NC doesn’t have it yet) and then hand it to the officer. They then take my phone and walk back to their vehicle.

However, once that first ID scan is performed, I can swipe from the bottom without another scan and have full access to my phone. That would seemingly be problematic.

Please correct me if I’m wrong.
What if the police drop it on the pavement while looking at it and damage your new phone? Who is responsible?

You because you’re not supposed to hand over your phone. If they don’t have an nfc reader to tap it, you pull out your physical id. That’s how it works. Just like at a restaurant you give the waiter a physical card and not your phone if they must go away to process your payment (still a common practice at restaurants in the US).
