On my 2020 Intel iMac, I'm at 14 GB RAM in use with just six tabs open on Firefox (it would be higher if I was using Chrome or Safari). Not much else running outside of Norton. I'm on Sonoma. Luckily, I have 32 GB RAM but 16 GB seems to be cutting it really close even for basic, everyday tasks. I can see offering that on the $599 model but you'd like to see 24 GB standard on the $799 and 32 GB standard on the $999. Especially since these probably are tough if not impossible to upgrade. I don't see 16 GB being sufficient for much for too much longer.
It is very unusual for 6 browser tabs to take up that much RAM. either they are all very complex web apps or they are running JavaScript with a lot of memory leaks. The software usage you describe would work just fine in 8GB of RAM. 16GB would be no problem. Mac Mini is all about CPU, it is great for coding and such, but PC users would benefit more with stronger GPU than faster CPUs.$600 for such powerful machine is amazing price. How much are the competing Wintel machines are selling for?
No they were not. They currently don't even sell headphones with the headphone jack, not even Airpods Max. It's a desktop computer without a decent speaker. So you connect it to speakers. If you want to use headphones, get an airpods, and that's their answer too. So it's weird to have the headphone jack on the front. And btw, they did exactly that with the mac studio.They were thinking people want to plug headphones in and its a convenient place to do so.

Good idea, I still have some USB a things I'd need to plug in occasionally so would probably get an adaptor anyway, so I guess itd be a case of looking for one with RCAUSB-C to RCA ?

It works extremely well. I record YouTube videos using my iPhone 15 Pro. Then transfer them to my T6 drive, plug it in to my MBP and edit from there.Does it work as seamlessly as an internal drive? Struggling with my 256GB 2015 MacBook Pro. Even though I genuinely feel I have no sizeable files on it, it always seems to struggle to have updates installed due to lack of space.
Why would you put the headphone jack on the back, it's meant to plug in headphones, why would I reach around to the back of the unit to plug in headphones.
