Apple collects the same data that Google collects. Both do not sell your data to 3rd Party advertisers as that would be counterproductive to their ad strategy. They would rather collect money from the advertisers multiple times than give them the data. Also, Apple does not want others to benefit from the data collection and hence wants to put themselves in an advantageous position, hence the useless talk about privacy labels and talk about privacy.

Report paid for by company benefitting from report supports what they wanted to prove.
It always annoys me to see ads in something I already paid for. A newspaper is a good example of that. Of course that makes the newspaper cheaper, but it also means that someone pays money to get information into my brain against my will. I quite hate that some of the largest companies in the world make most of their profit from advertising. I know that advertising is important, but if advertsing companies like Google or Facebook make much more money then the companies that buy the ads, something goes very wrong. That's why I use every trick to block ads I can find.? You do realise that you can advertise without having access to or needing user data?

Google shows target ads all over their plattform.
Also Apple don't collect any financial information (salary, assets, bank info) with the exception of one credit card which is not tied to my bank or government ID Data for me. They have no way to know these things.
I also don't consider data I voluntarily inputs to Apple has collecting data. If I am giving them my name to register an account, that's not what I'm concerned about. What I am concerned about is data which I haven't explicitly given them.
