I see this as no different from Netflix using Amazon AWS. Why try to make something from scratch work when there's a perfectly good alternative - even if long-term that's not the final resting place.
The point might be made that if one wants to use cloud services it's probably better to go to the actual experts (Google) than to pretenders (Apple)

By all means, feel free to jump to Google, for your storage, if it suits you and if it's even possible.

What Apple offers to consumers are its services layered on the backbone storage. You buy the solutions, not the means.

Are you outraged that iOS is not a native operating system build from scratch, but rather based on BSD/Unix?

Do you check who your ISP use as backbone provider? Because it's not Verizon, Comcast, etc, doing the bulk data transmission.

Do you even know whether your Shell or Exxon-branded gasoline comes refined from Valero or Philips, or where the crude stock is produced from?

This isn't good, some of us use Apple so we aren't promoting (Clowns) in America or utilizing anything to do with Google.

I do backups of my phone and iPad to my computer. I don't use iCloud for anything other than bookmarks, calendars, reminders, address book, and find my Mac. Nothing to hide there really. If they want to know my neighbor's phone number so be it, or who I am meeting for lunch, no big deal. No photos, and especially no docs, personal material, or work related projects.

That works until the person you want to meet for lunch has been determine to be a subversive by the political class or whomever has access to your data. Then you automatically become a subversive. This is why privacy is important. Its why metadata privacy is important.

We all, at least should, meet and talk with people with whom we don't necessarily agree with. But those in control can't afford to take that risk when their power is at stake. We don't have that today in America, but we are one of only a few countries in the world were this loss of privacy and the power that it generates does not yet exist. And we are losing it fast because of apathy and people are afraid that the government will not protect them unless privacy is given up. People have to protect themselves, its not up the to government.
 
I do most of my banking and bill paying on the iPhone and have many cards linked to Apple Pay. My health and activity data from my Apple Watch is on my iPhone. My phone knows my face, my fingerprints, my entertainment preferences, shopping habits, and where I am in the world most of the time. I actually don’t use iCloud for most things, but I guess you’re right: on some level I trusted Apple with this data more than I did Google or Microsoft, so I was being selectively naive too (or intentionally ignorant and hoping for the best).

You're streaming service is storing video in Akamai.
You're IMAP email is kept on a server in Ireland.
You're bank's website is being hosted by Microsoft Azure.

Who ultimately cares?

No one cares until there is a data breach. Doesnt mean this type of storage is a good idea.
