Remember the time, when apple products were so awesome, the actors were complete unknowns, and the ads were awesome. Now , we like the ads cause super star actors make them good.
I'm referring to 2005-2011, when Apple products hit thier peak that people will remember.

The product line is pretty similar to your golden age.
Between 2009-2011 the MacBook line had 5 models, as they do now. Mac Mini, Mac Pro lines haven't grown. The iMac lineup is a little fatter thanks to Retina and non-Retina models, hopefully non-Retina are phased out cleaning it up a bit in the future whilst bringing down the retina prices.

Apple is resorting to celebrities because its product line is waning. These types of ads have no soul and are the result of marketing committees with zero connection to the product or service they are selling.
This ad had soul, the product simply spoke for itself and didn't require a celebrity to caress the marketing message into existence:
I think the line "I'll be a lot more natural" is a BIG hint at what's coming this year for Siri.
I've been thinking about this, and I disagree. Siri has some really beautiful and simple visuals that should be explored in an ad. The celebrity can take the back seat in my opinion, there's enough in hands free Siri to have the full focus.It's a different thing though. If your ad is about the physical form of a product, then all you need to highlight is its physical form.
If it's about a feature like hands-free Siri, I need something more.

you are comparing celebrities appearances in years and I'm comparing in months (one year) Why don't you check out the apple adds from just 2016.
As for macs......that's not the cash cow, hence its being ignored, now have a look what has happened to iPhones and iPads, we had one model of each.....

There are many celebrity ads from back then. I just picked 1 per year to show your statement was flat out wrong.
Secondly Apple is way bigger than it was- more sales, more product lines, more users. I'm no fan of marketing I just pick what's best for me, but it makes sense for them to use more celebs if it's working for them.
Being ignored? They launched a completely new model MacBook just last year which is the best portable computer that I've ever used for my needs and they updated it this year. The MacBook Pro will soon get the latest Intel processors (I'm guessing a launch at the next Keynote, hopefully soon so the people who want them can get them). And there are rumours of more updates to the MacBook Pro line. Ignored? Not from where I'm sitting.
What's happened to to the iPhone line? To me it's not a "mess" - as you described. They just come in more colours and/or sizes with some feature differences between the sizes too - just like MacBooks, iMacs and iPods have for years. Steve Jobs started that trend, and I like it. Choice is good.
What's happened with the iPad - the same thing more sizes and colours just as Steve Jobs did with product lines. And additionally a Pro version with extra functionality - just as Steve did with the MacBooks. My parents will never need Pencil support, a keyboard etc. But I really like the pencil. My parents will be happy with the standard non-Pro iPad (they still have and enjoy the iPad 2) and I can pay more for the Pro with the extras.
One model of each product sucks, I hate being forced to use a set size. I prefer the smallest laptops, largest sized iPhone and the middle sized iPad. I'm also glad for different colours. The Space Grey MacBook looks great and is a nice change from the silver MBP I use.
