This is how I've been using double tap for ages:

Settings > Accessibility > AssistiveTouch [ON] > Hand Gestures [ON} > Customise Gestures > Double Pinch - [choose action]

I chose Siri

.. they must be extending that setting more widely?

as far as I understood, it mimics pressing "ok" now
