Handing over private Health data to a company as disreputable as OpenAI is a tremendous risk. I doubt the benefits would be worth the inevitable PR disaster.

It is optional. You'd have to complete multiple steps to opt-in to this service. If you don't want it, don't spend time signing up for it.
You can already share Health with a bunch of different stuff, how is this different?
