Unfortunately, my outdated iPhone X cannot do that

It can do it in post-processing, just like iPhone XS prior to iOS 12.1 (which now also allows in in real-time). If you capture depth photo with Chromatica camera, then in Photos you have Depth control

It’s very entertaining to read a pointlessly angry posts by people (and by people I mean you) to pick one thing and make it a huge deal of it. It is not a $1000 phone because of the depth feature, if you didn’t manage to notice.

Depth sensing tech still needs a lot of improvement. I would say the way it is done today is barely usable.
This picture was taken by my iPhone X Max using the "portrait" mode.
Take a look at the chair or at the right side of the pumpkin.

To be fair to Apple, they have called it 'Portrait Mode' and all of their press material to do with it has people in the scene.

It was designed with the intent to use on people, not random stuff in your garden.

Well, your pumpkin needs a lot of improvement, too. Pumpkins don't even have cores. How do you expect a phone to process your cored pumpkin?!
