They are really gonna disappoint me if they go wireless (as an only option) on the Magic keyboard though!

They already have. But it doesn't matter much because you can use it as a wired keyboard if you want.

It has an internal battery and charges lightning to USB. Works fine wired if you just keep it plugged in.

You can turn Bluetooth off and it will still work.

Not quite sure what you're asking. Magic Trackpad, Keyboard, Mouse all use Bluetooth for wireless.
