I would image that anything like super cruise/safety critical would be outside of the scope of CarPlay, because the iPhone would then fall under ASIL ratings, for safety critical software.
There is going to have to be some level of control given to CarPlay in order for navigation to (especially in the newer version of Super Cruise and the coming Ultra Cruise) to work.

Outside of the car utilizing the Map info, not sure why that's a big deal? As long as GM has a way to transfer the Apple Map data/directions to the vehicle's computer so it knows where to go.

Mostly because if Apple Map info and GM LiDAR map info don’t match who wins?
 
I would argue GM cause they are going to make us pay monthly (OnStar) to use Super/Ultra Cruise. But I would be happy to be wrong here.

Apple is the latest company to do a complete mapping of the US and is not so secretly developing tools for a driverless car. I would bet on them.
 
But unless iPhone is mandatory to operate the car, GM will have to provide their own data etc, so cannot see why they would just handover their premium features to Apple.
