Exactly, eSIM providers globally charge more for the same thing. I did some research on countries that I have been before and purchased local sims for data, price is about 50-200 times more than physical SIMs. It is outrageous. I wonder if I can buy iPhone 14 from Canada and use it for US carriers

Another thing to add is usually these esim conversions are also in tricky situations. Just travelled to India, it isn't easy to get a physical sim already and once you do. Esim needs an email to be linked to your account (which has to go through customer support), then when you get an esim all text messages are blocked for 24 hours. (Airtel). This is kind of strange since lot things in India is through SMS OTPs. Apple did light a fire for the transition but it could have been done without being an annoyance to the customers but advising carriers about this earlier.
