I’ve only been using CarPlay for about a month since buying a 2019 Subaru Impressa. I’m using a iPhone 7 (now on iOS 12.4 previously on 12.3) and have had none of the problems you list.

Does your Impreza have the upgraded H/K system? (e.g., Touring Ed)

(PS: Love the Impreza.)
 
I've found that using it as an iPod (iPhone+USB <> Radio) has made a noted difference in the fidelity of the music.
Ex. The H/K system in the Subaru has a bass sub in the trunk area that barely makes noise when I use CarPlay unless I crank the volume; as an iPod or BT, it rumbles the whole car at 1/3rd volume.

CarPlay is handy but it's not exactly wowing me. :(
Yup, I’ve found the same thing. Essentially every other way of connecting my phone to the sound system sounds fine... it’s just Apple Music via CarPlay that sounds so frustratingly awful.

Is it me or did you notice this begin to happen in iOS 12?

I want to say the issues began with iOS 12 but can't say conclusively.
 
Re.: "revamped TV app". I'm still puzzled about what exactly the TV App is for. I see it on my Apple TV 4k, but I've never actually launched it.

You are lucky. I often hit the button that launches it. Which means I have to hit another button to get out of it to get to the main screen where I can pick the app that has the show I want to watch at that moment. So for me the TV App and the dedicated button are an obstacle, in the case of the app, and a trap, in the case of the button.

I have an '18 Crosstrek (with H/K) and I have some of those issues with an X. the biggest problem is the sound will just drop out for a second and then come back.

I can have CarPlay connected before I leave my driveway and by the time I get to the end of the street, it completely disconnects from H/K. I have to disconnect it and reconnect it, in order to get it to work.... and it only happens when I leave the house. Never anywhere else.
 
Abysmal sound quality.

Low volume. No bass or treble. Plus, snap/crackle/pop intermittently during any audio playback; Apple Music, SiriusXM, Audiobooks, Podcasts, etc.
Two phones. 7 Plus and 6 Plus, both running 12.3.
Reset Network Settings, Rebooted Phone, no changes.
All Apple-branded cables; tried multiple cables, no changes.
Two (2) different vehicles: 2018 GMC Terrain (Bose Premium) and 2019 Subaru Forester (H/K Premium).
Same problem.

The only workaround is to either use the phone on Bluetooth (no USB) or turn-off CarPlay altogether and use it (literally) as an iPod via USB.

Try with a new iPhone perhaps?

I also have a '18 Crosstrek (non HK unit) - My iPhone X does CarPlay very well. I did have an issue with a finicky USB cable a few months ago. Fixed that with an Apple cable.

Already tried with two iPhones, several with X or later have had the same issue(s) with CarPlay. Having the same issue with two different iPhones on two different vehicles (GMC and Subaru) with very different head units all points to Apple.

Ironically, everything works/sounds amazing on the H/K in iPod mode with the same Apple-branded USB cable.

At the moment, conjecturally, the audio glitches are not happening with Android Auto.

Try this. Turn off CarPlay altogether, plus in the phone, then use it under Media as an iPod. See if that makes any difference.

And still, the phantom keyboard when you first swipe up and unlock iPhone X is still there...

By chance do you turn off the wifi on your phone when you know you're leaving. Now that's an issue I've had, if I connect my phone to car, I have to turn Wifi off on my phone and let it grab LTE before I get down the street or it does disconnect and I have to manually hit play again

You have several companies trying to get on the same page. True though if they are going to promote something as a feature benefit, they should perfect it, meaning both Apple and automakers need to be on the same timing with releasing updates together for their products.

I need an update that will fix the apple watch notification bug where I still get notifications for group messages that are set to do not disturb.
