How do you have your account configured? Via the "Google" setup, or via IMAP?
It seems to be the IMAP setup that's problematic. I'm experiencing this daily "offline" issue since the release of 10.14.4. It was really bad immediately after the release, with an infinite-login issue preventing use of accounts. The issue eventually reduced down to just the account being offline unless you told it to go online. That's my current experience. My dozen other IMAP accounts (hosted elsewhere) work fine, only the Google-hosted account is being a nuisance. It worked properly before 10.14.4.

So I installed this on my MBP, it restarted the computer 3 times (I thought it was 4...) which I thought was totally bizarre. I installed it on a loaner Mac, did the same thing, but I saw the firmware update screen.
Apparently there was a security fix for EFI, so this is normal. Really hope it doesn't freak out too many end users here

My system is also reporting a "iTunes Device Support Update" that is available when checking for updates. Does the "macOS 10.14.5 Update" include this as well? Basically wondering if I can just install the 10.14.5 update to get both updates, or if I actually need to select both of them.

safari and mail are both much quicker after this update.
apple is doing a great job with these updates.
releasing them in sync with iOS, tvOS, watchOS is also great (it wouldn't make much sense if not all updated at the same time)
macOS Mojave is now my most favorite mac OS since X was released.
I've especially noticed Safari being snappier. And yes, I know that's popular to say for many reasons, but this time it's actually true!

Saw this too, but installed first the Macao’s 10.14.5 Update alone. After that System Updates didn’t find the iTunes Device Update anymore.

Now it is missing after installing the security update for High Sierra. Is there a way to manually download and install it?

When opening a book a process called "Book Networking" is opened many many times. If it's a small book, say a novel, it slows the iMac down but doesn't(usually) crash the app. A bigger, more intensive book, like a study guide crashes the app within a few seconds. If you try to adjust the text size font etc, that only expedites the problem.
I first noticed it when I went from H. Sierra to Mojave in February with the purchase of a new iMac. Apple talked me through all the normal steps like safe mode etc. The same books work flawlessly in High Sierra and I was able to recreate the same issue in Mojave on another Mac so I'm positive it's not the books themselves and so is Apple. They captured the packets and all of that stuff about month and a half ago and I was told it would be fixed in the next release but....
Open Activity Monitor and then a book and see for yourself; anywhere from a dozen to 100s of that process run simultaneously.
At this rate it will be 10.15 before they fix it...which I think is sort of the point. My choices are to read the books(study guides) on my iPad or use a separate install of High Sierra which is just troublesome.

Very sorry to hear. I have other problems with Books and since they cannot be solved I always choose to delete the app straight after I update the OS. I do all of my reading on my iPads but I also bought the Clearview app for the Mac just in case. I think the iTunes Device Support Update is needed for the latest iPads (mini 5 ans Air). I could connect my new Mini5 to iTunes on my Macbook pro running Mojave 10.14.4. I got en error massage that it needed a software update but it connected nevertheless. But it could not connect to a white Macbook running El Capitan or to a Macbook Air running High Sierra. But now it connects without problems to all 3 Macs after I ran the Device Support Update.I think the question is, if the iTunes Device Support Update is in the High Sierra Security Update or 10.14.5
