Assume everything you type is public knowledge and it makes dealing with this stuff much easier.How does Apple deal with the data of non-citizens who just happen to be visiting or living long term in China? Will their data get sucked into the Chinese data center as well?

Apple has some of the most consumer focused privacy policies, so if you're worried about what they're doing with your data you must run a mile from Google, Facebook etc..Basically iCloud is a trap. Use at your own risk. Assume everything on it is being scrutinized daily by the govt and that your backups are being cloned to another device. The choice is yours whether to use it or not. It certainly isn't necessary.

Well, as long as you’re not storing illegal materials or engaging in illegal activities then you have nothing to worry about. If you think that the CIA/NSA couldn’t access your iCloud data then I have a bridge that you may be interested in.

Anything that’s connected to the Internet has no privacy. It’s just a fact of life, there’s literally nothing you can do to stop a three letter agency or state actors from accessing your data should they choose to do so. Well, short of never using a cell phone or Internet.
