What a mess Apple, Just allow passthrough. You would have the number 1 goto streaming device, talk about make hard work. I really like the ATV as I live in the Apple eco system, but just can't stand the poor sound, I find I have to go back to the Nvidia Shield to watch all TV shows & movies for a higher quality sound experience.

Then again, the solution Apple is using, must be a standard method. Moreover, validated by Dolby Labs, I’d imagine.

I can’t explain that one.
What I meant was: does the Atmos logo show on HUD for a movie, that is marked as having Atmos soundtrack in the Store, but does only play back as PCM5.1??
In my experience, these go hand-in-hand!
Logo in HUD -> clip plays as Atmos+PCM
No logo in HUD -> clip plays as PCM5.1/7.1
That is why to my eyes this indicator is retrieved directly from the stream.

will this take a full mkv atmos and make it apple tv friendly? like take a Dolby HD Atmos and create it into a DD+ Atmos?
Sadly, no. No-one knows how to convert TrueHD Atmos into DD+ Atmos (same situation here like we have with dual-layer BD Dolby Vision and single-layer iTunes Dolby Vision). In public domain, I mean.
You could go out and buy Dolby Media Producer to import and export Atmos formats. At least that’s what I understand. Never had a chance to see DMP in use.
This Subler version helps you to convert web-dl clips that have DD+ Atmos soundtrack(s) in MKV container, into iTunes-friendly format.

oh okay yeah not much help there really. most mkv files have HD Audio Atmos not DD+ Atmos. At least not from where I have found.

So is there any rhyme or reason to what movies actually play in Atmos vs just being marked Atmos (but playing PCM)?

I just got an Atmos receiver and this premature marking of some Atmos movies is annoying. But the ones that are truly Atmos sound amazing. Even having better quality and louder soundtracks from iTunes movies is a huge step in the right direction.

Blade Runner 2049 in particular has some of the best sound I’ve ever heard.

I’ll be a happy camper with the ATV when everything is smoothed over and all the Atmos films play that way.

For me, using Infuse 5, I can get the AppleTV to enable Atmos. I can even get Infuse to recognize that format. BUT ... the signal coming out of the AppleTV is garbled to a Pioneer SC-98 receiver (via PCM processing). I do get 7.1 identification on the receiver, as well. Obviously, I can get those signals to process out of my OPPO UHD player, which means the Amp works no problem. It must be something in the re-coding via the AppleTV.

What do you feed to Infuse?
Have they finally found a way to output bitstream?
DD+Atmos comes out of appleTV OS 12 beta even via native player, so It must be Infuse that messes it up.

I may have missed this but movies shows Atmos but plays PCM. What gives? I have a sound bar. Some movies play Atmos and some even though they show it, don't play it.

Apple uses something that's called Dolby MAT 2.0
Not all titles that are tagged in store, seem to play Atmos yet.
tvOS 12 is not in production state yet, after all.
