I see many people reported this issue...do this...unpair it and then set up as new "don't restore from a backup or sync apps" and see how will it work for a day or two.
If not check them logs from your iPhone -> Settings -> Privacy -> Analytics -> Analytics Data -> and look for "WatchApp Extension." You might then discover any misbehaving and causing the rebooting.

Ok and thanks! I will unpair it once more and reinstall as a new watch. I have done this before, but added like 3 apps (I have around 300 apps) and it still rebooted. What should I be looking for in the watch app extension?

sorry, but this is related to the phone and not the watch. did you try to set it up as a new watch with no apps install on the watch?
 
It rebooted about 3 hrs after I updated.

I highly recommend you contact apple support over the phone again and get a replacement watch asap.

my watch hasn't rebooted since i updated it to 4.0, still on 4.2.2 and im not gonna update it till i replace my broken iphone 6 screen.

good luck, let us know what they do and make sure your press the issue of updating the watch and its constantly rebooting after you did the update.

power down the watch, disconnect the iPhone Bluetooth and power the watch back on "leave the iPhone Bluetooth off" and see how will it work for you for a few hours

i think it's time start beating this dead horse and she should just get applecare to replace the watch. Putting a whole bunch of bandages wouldn't solve the problem. if you get what i mean.
