You will. Even if you use the same name, apple identifies each source with some sort of UID that changes from watch to watch and reset upon un-pairing. Don’t ask me how I know this. :(

Well my problem is I can't figure out how to reinstall the default apps after you delete them, and my issue with the unpariring and reparing is something no one seemed to have mentioned yet in this thread: it creates ANOTHER Apple Watch as a source in the Health App... I already have 4 apple watches listed there and I've only had 1 series 3 watch... It really bothers my OCD... I hate how I can't just merge all the apple watch sources into one. :(

I guess I won't be updating until I buy a new SE or a future iteration of the Apple Watch come September...

...and where do the data go, if you delete the old source which contains health data? They are saved "by date", so your history gets deleted. If this is not the case, please confirm. :)
 
I got my watch in 2017 as a gift. It’s just been the last few months I’m dealing with this foolishness. I bought a Fitbit Charge 4 today for a lot less than a new watch. My son and his boyfriend also have some Series 3 watches. They’re going to buy SEs.

Supposedly the next WatchOS is going to fix this. Trust me, this annoys me too.
 
This is an absolutely terrible consumer experience. Especially for a device that is still sold to this day.
100% agreement. Apple is still selling the series 3 — so if I buy one now I am not buying an old product — I’m buying a brand new product that cannot perform as advertised. Apple advertises series 3 capacity as 8 GB however the watch reports capacity after the OS loads which is about 3 GB which is insufficient to update the device. It is truly pitiful to watch Apple support personnel try to explain why a product advertised as having 8GB Capacity on Apple website only shows 3.1 GB Capacity on the actual device.

The unpairing workaround does not work consistently — it took 5 days of constant trying to help a family member update a series 3 purchased late January 2021 to use the unlock phone with watch feature. After updating the watch was behaving poorly due to the severe memory constraints and Apple support sent it in for “repair.”

It was returned a week later with “no action taken - device functions according to specs” explanation, however the OS was reverted to the previous version that does not support the unlock phone with watch feature — so it’s back to Apple repair again to update the OS.

This device is eroding 10X brand value for every $1 it earns Apple. Shame on Apple for selling a product that cannot function as advertised. This is unseemly and I am hoping this is not a signal that Apple has lost its way.
