Apple Watch Ultra Wayfinder face not working properly?

Picked up an Ultra yesterday and couldn’t figure this out!

You need to tap the face (literally on the circle - not anywhere) on the watch and it changes.

Can we change one of the existing "Ultra X/Black" to a different X? I.e., change only the foreground while keeping the black background? For example I want to have an "Ultra Gray/Black" color.
