The two AppleCare options on the new Macbook Pros are not very clear. On one configuration, there is a $90/yr option (until cancelled) or a 3-year $250 option. If I go with the 3-year option, is there a way to continue at an annual rate afterwards, or does the 3-year option preclude the ability to continue with AppleCare after 3 years?

Same question here. I was looking at the 16" M1 Pro and it quotes $399 for 3 years or $150/yr. I am "guessing" they mean 3 "additional" years after the one-year warranty expires for a total of 4 years?
Does the first year initial warranty include the exact same coverage as stated in the extended warranty?
I am also "guessing" that regardless of the 3-year or 1-year plan, they can change the rate at renewal time?

So drops and Spills only kicks in after first year even if AppleCare+ is purchased up front?
No, drops and spills are from day one with AppleCare plus. If you only had the initial one year warranty (if you did not opt for Apple care plus ) then you will not get the accidental damage, only any manufactured defects in the computer itself.

It looks like these two Apple links haven't been updated for today's new products, but I imagine they'll be included once they start shipping. And yes, you have 60 days to add it.

Did they increase the prices? I'm in the US and after adding items to my "bag", I see:

The duration of the policy is a bit unclear to me. I've read about a yearly option but don't see anything about that when purchasing. It does say "Get up to three years of technical support and accidental damage protection" below the links referenced above, but I don't like that it says "up to". The "Learn More" page also really doesn't describe the duration of the policy.

I believe that is the included phone support. (Which is extended when you purchase AppleCare.)
you'll want to verify the number of "additional" years with Apple before you buy since in the past the extended warranty was for 2 additional years for a total of 3 years.....it wasn't 3 additional years

I wasn't able to add it to checkout because you can't check out with gift cards and get the yearly AppleCare option. I'll have to add it later.
Being able to get indefinite AppleCare+ is pretty wild. Sure, at some point it becomes a poor value but for the first ~5 years that‘s a very impressive offer IMO. I’ll be doing that.
But for Macs, can NON-US buyers get cover longer than 3-yrs?
(whether topping-up the 3-yrs bought upfront by paying annually for year 4 onwards, or maybe by just taking the annual one from the start and continuing paying it beyond the third year.)

Other threads clearly show that you can continue it after the three-year, its cheaper anyways to do the full term and then continue.
With EVERY other Apple device I've purchased; iPhone, iPad, and Apple Watch, I was always given the chance to do monthly AppleCare+ payments to continue after my original 2/3 year warranty was over.
I'm paying $9.99 a month to cover my iPhone XS after its 2-year warranty was up (probably time to cancel this), $5.99 a month for my iPad Pro after its 3-year warranty was up, and $3.99 a month for AppleCare+ on my Apple Watch after its 2-year warranty was up.
Apple gives you 30 days after you warranty expires to subscribe to the renewable warranty plan.
I would expect the new systems to also adopt the "pay as you go" approach.
