Very nice. I’ll post a pic Monday that will make you weep - one of our 300lb capacity smokers got squished by one of our own delivery trucks.

Box of rocks doesn’t even work on our team anymore, regardless I’m reminded each day I drive up just how destructive & costly stupidity is.

Yikes!

Delicious looking as I’ve got a good idea what’ll come out the other end. That BBQ must smell freaking Amazeballs. Do you ever get tired of it? I haven’t but I’m a glutton so Yanno whatevs. Closest I have on my phone was some BBQ beef shoulder & smoked pulled pork Shoulder we did for a couple decent sized
localearthfest & harvest Festivals.

Erik, this was the last steak I did - ribeye with brown butter & scallops w a nice Stiegel to wash it down.

That too looks amazing. I don't think I could ever get tired of it. Everything we have is fresh and made in-house. It's a tiny menu, but there are many combinations that I can put together outside of the menu.

I really miss cheffing but while the mind is willing & sharp, the 40+ year old body ...Yanno not so sharp Anymore n feeling those decades of long hours. That Alongside the hours, Man in short, I want to stay married :D

ALL HAIL ERIK CDC :)

It's a young man's game now. At 50, I just can't keep up the 70-90 hour weeks anymore. My last job, as corporate chef for a small local chain, did enough damage to convince me that it was time to hang up my knife roll and boss pants, and go work somewhere simple, focused, completely fresh, and small-town. I'm set for cash, so the timing was perfect for me to (semi-) retire.

So how old were you when these photos were taken?

I spy an empty laundry basket over there... Were these taken at your bachelor's pad?

With the time stamp on this pic I would have been 41. My birthday is in September.

My daughter would have been going on 4. You might notice the toys around the basket. Those would have been all hers that she probably dumped out. And no, not my bachelor's pad. That was the home my wife and I rented from 2000 to 2018. I've never had a bachelor's pad. I went from living with my parents directly to living with my wife when we got married.

That is hilarious!! :D

Tell us more!!
LOL! I see nothing funny about a sizeable Ribeye steak with A-1 sauce. In fact, that's very serious business and I take making my steaks and consuming them with A-1 with the importance it deserves. :D

More? Well, it was delicious. :)

Good, I still have time to bake you a cake! ;-)

No fun!

Probably better - all those wild parties and stuff are over-rated from what I hear?!

*LMAO*

Okay, being pasisonate about eating steak - that I can see. But you don't see any irony or weirdness or something in that you are eating your ribeye steak WHILE taking pictures of your steak, along with your MacBook, AND a bottle of A-1 steak sauce? 😐

(That must have been at your parents' place, either that, or you have a very forgiving/tolerant wife?!) *LOL*

More? Well, it was delicious. :)

Ha ha!

I’ve got a righteous Grass fed grain finished strip loin. That & a beautiful 9 rib & a few tritips amongst other delish things to nibble on.

Grilling/smoking and combining that with macs just makes me very happy. That’s it, I’m gunna slack that 9rib out, cut a few fatboy chops & smoke the remaining 4 er 5 ribs a la’ roast in my smoker this weekend.

:D

No, no. :D

The pic of the steak was taken in 2012. I haven't lived at my parents house since 1997, which is 9 years before the introduction of the MBP and 6 years before the introduction of the 17" PowerBook (which is what's in the pic).

In 1997 I was 26 (27 after September) and had a PC.

My wife has known my passion for meat (as well as other things) for a very long time. She handles that in the same way I handle her passions - with tolerance.

She shakes her head if she hears about me posting pics, but as long as there's nothing that reveals anything or violates her privacy she doesn't care.

I've got an idea for you guys!

That was a sad, sad day. It actually doesn’t look half bad in the photo none the less was rendered useless by the collision. Doors & seals etc. don’t line up Or close quite right etc. At best now it’s Worth its weight as scrap.

Oh, I forgot to add the worst thing. Aside from the mandatory quality control testing of hams, sausages, porchettas and shoulders/picnics etc. , the aroma while sitting at that break table while the smoker was doing its smoky thang was just the best ever. So very sad.
