If an bug in GM occurs, the GM and final are not identically.

In iOS5 GameCenter was in GM und was removed in the Final Build.

But you are right: In most of cases the GM build is offered is the final version after a few days/weeks.

Beta 6 could be today....

Could be. One thing I think we'll all agree on is that there's no way to predict when the next beta will come out, or how many more there will be before the GM. No method of forecasting has been able to predict the beta releases so far.

My guess is, given the extensive nature of the OS overhaul, they'll want a few more betas before the GM, to make sure they've ironed out all the bugs. Theoretically, they could release as many as four more, if they go to a weekly schedule. If they want to stick to an every-two-weeks schedule, there could be two more.

Personally, I think they're going to want at least two and maybe three more, though, of course, that's just a guess. So I don't expect beta 6 today or tomorrow, but I won't be overly surprised if it comes. (And, of course, I hope it does).
