DEAR GOD! YOUR RIGHT!!
How dare apple cost you ONE SECOND of your time! Ad that up for every update (say 1 a month) and that's TWELVE SECONDS A YEAR!!!!!

SUE THE BASTARDS!

It's not about the time required. It's the principle of software modifying your personal preferences without permission. Some programs ask you during the installation process whether you want to add the program to your Dock...it's called being considerate to the user.

I realize that if I somehow had a Mac that had never had iTunes on it, the iTunes installer or the iLife installer might assume (and maybe even be right for over half the users) that I'd like to use iTunes regularly and it deserves a place in my dock.

But when I already have iLife '05 and I install iLife '06, and I had previously taken Garageband out of my dock, the installer could easily notice that, and I think it should.

I probably won't smite anybody today

Less smite, more smut™. :D The t-shirts, bumper stickers, and buttons should be available by close of business. :)

P.S. Are there a lot of apps whose icons get placed in the dock after an update? I've never noticed this before, although I already have iTunes in the dock. But none of the rest of iLife is in the dock, and they seem to stay that way despite upgrades.

If you didn't have iTunes in your Dock, and then you downloaded the iTunes update, the update added iTunes to your Dock. If you did have iTunes in your Dock, then you wouldn't have noticed anything odd.
Does it? I don't have iTunes on my dock, and I updated it several times, but I don't recall putting itself on the Dock.

It does for me. I don't use iTunes very often on one of my computers running Panther, and so don't have it in the Dock. I definitely remember the last update putting the icon back in the Dock upon installation.
