I want to transfer all data and photos/vids to new iPhone, WITHOUT using iCloud. Is there a way presumably with the two phones next to each other via wifi or AirDrop?

Also for photo only back up I use Image Capture Mac application. But is there an application to copy other files like Voice recordings, notes, contacts (without copying iOS and apps) ?

Any info appreciate, TIA

I did the wifi phone to phone from my 11 Pro to 13 Pro and it went great. Other than having to log back into some sites everything was very smooth - all data there etc.
 
Where you get one of those
It is just simpler to do a iPhone to iPhone transfer, no adapter required. And the iPhone to iPhone transfer is very fast. That is how I initially setup my iPhone 13 Pro Max and transferred everything from my iPhone 6S Plus.

You mean transfer via wifi ?
 
I would personally use a Mac for this. Plug in your old iPhone and backup your data. Make sure you encrypt your backup rather than making a regular backup as encrypted backups backup everything including sensitive data.

Once that is done, then plug in your new iPhone and restore from backup.

What's the method via finder?
In the newer versions of macOS finder handles what use to be done in iTunes for accessing your phone which includes syncing and backup. I would suggest that you backup your old phone to either iTunes or through finder regardless of what method you choose to do the transfer to the new phone. It is always a good idea to backup as a precaution just in case.

What are the steps via Finder ?
You connect the phone via USB to your Mac computer. Open a finder window on the Mac, your phone will show up as a device on the left side of the finder window, select your phone from finder window. Finder will then display much of what iTunes use to do. You can then sync or backup from Finder. I could be wrong about this, but I think macOS 10.13 was the first version to incorporate iPhone sync and backup in Finder.
